Curious as to why I am posting about food? Well for starters, I love it (LOL) secondly, I want to add a couple other categories to my blog. I had always wanted to have a beauty and lifestyle blog – I love to travel, discovering new and old restaurants, visiting food fairs and other such things. And while this post is quite spontaneous, I couldn’t help but want to share this delicious avo-on-toast lunch I created.
I’ve never had avocado on toast sans bacon. I’m a raging carnivore and who doesn’t love the combination of the two? Yummmmm! But this Saturday I gave the vegetarian option a bash and delighted in the result!
Two slices low GI oats & seed loaf
One ripe avocado
One small onion
One ripe tomato
Cut the ripe avocado in half and remove the pit. Scoop the ripe flesh into a bowl, add a 1/2 teaspoon of lemon juice, and add a pinch of sea salt to taste. Mash the ingredients together using a fork, keeping the texture slightly chunky.
Spread 1/2 of the mash on one slice of toast and the remaining half on the other slice of toast. Garnish each slice with a thin slice of tomato and a light sprinkling of grated chedder cheese. Add black pepper to taste
